I really do like this library. The only problem that I am having is with images. I add an image to a table and it renders. The only problem is that most of them are blurry or some odd size. Thankfully, the aspect ratio is maintained. I noticed that some images are crisp and clear where some others of the same type (jpg) are blurry.

Does this have something to do with the resolution of the image? I noticed that the same image at different resolutions will render a different size.

JPGs are simply stored in the PDF file.
They will be drawn in the size you specify (if size is ommitted, size information from the image file will be used).

Other images are converted to the PDF image format - but this is a lossless process.

The Adobe Reader sometimes smoothes images on the screen. A 16x16 image blown up to full page size can either have sharp edges or a blurry look - this depends on the reader version and the custom settings.
